El Pozole in the months of April to September

Pozole. From the Nahuatl pozolli , from tlapozonalli , which means sparkling, it is a broth made from cacahuazintle corn kernels.

Which is cooked for two hours and in this process, the corn kernels lose the fibrous shell that covers them and when they boil they open like a flower,

which gives them a foamy appearance. It is accompanied by pork or chicken, different vegetables, and radish and lettuce as decoration on top.
